At our wine shop, we believe that each month deserves its own wine. As the month that ushers in summer, June is perfectly complemented by the playful aromas of white wines or the sea-breeze memories evoked by rosé. There is a myth among people that on the first sunny days, white and rosé wines take the throne, and only true enthusiasts remain loyal to red wine and its delicate notes.
However, neither can resist the intense waves of fine bubbles. Sparkling wines invite you to a seductive game, tempting you with bold notes and revealing the colors of summer in a way nothing else can.

If you’re looking for an elegant sparkling wine, filled with a bouquet of finesse, you’re reading the right text. Ergo sparkling rosé wine is brimming with refined aromas of red currants and green strawberries, subtly enriched with hints of sage. You’ll find the needed freshness of fruit in the basket of flavors it delivers with every sip.

The refreshment you crave comes from the gentle hints of cherry, simultaneous acidity, and sweetness of cherries and apples. You’ll be enchanted by the long finish, becoming memorable with enduring notes of grapefruit and a pleasant saltiness. This wine is a rhapsody of flavors at the peak of its authenticity.

 

Achieving perfect harmony

The wine we present to you today comes from the heart of Šumadija. In the fertile village of Lozovik, near Jagodina, the TemeT winery produces 2,500 bottles of Ergo sparkling wine annually. A gem among sparkling wines, it is created by blending the noble varieties of Pinot Noir and Chardonnay. In the elegant bottle of Ergo, these two varieties create an irresistible harmony of aromas and flavors.

Each individual bottle tells a story of patience and expertise. Of course, the process starts in the vineyard, but what happens after the grapes are harvested? After pressing whole clusters, the must ferments in stainless steel tanks for 14 to 18 days. The temperature is carefully controlled between 14 to 16°C. During this period, the wine develops its characteristic aromas and fresh tones.

Then, the base wine of Pinot Noir ages for six months on the lees in tanks, while the base wine of Chardonnay is perfected in barrels. The traditional approach, known as the champagne method, includes a second fermentation in the bottle. For complete maturation, the wine stays on the lees for at least 24 months, reaching its full flavor richness.

To best highlight the refreshing aromas and refined bubbles, we suggest chilling Ergo sparkling wine well. It’s a perfect companion to summer meals, so direct your culinary skills towards delicate steamed seafood. The fruity notes of red currants and green apples pair wonderfully with cheeses like Brie and Camembert.
